Success through ‘Super Burritos’

MINOOKA — In tight economic times, eating out is a luxury for many. When they choose to spend their money on a restaurant meal, they have many options before them. In Minooka, one of the options that has survived through it all — despite the comings and goings of its competitors — is Ruby’s of Minooka.

Known for its authentic Mexian cuisine, the restaurant at 506 Mondamin St., Minooka, also offers a wide variety of breakfast options to entice customers during both traditional breakfast hours and throughout the day. And, while customers and owner Jose Macias both love the pancakes, Ruby’s is still known to many as the place in town to get a “super burrito.”

When did your restaurant open in Minooka? How would you describe the success of your restaurant since that time?

The restaurant opened in 2006. Since we have opened, business has definitely grown every year. We have a very steady breakfast and lunch crowd, and a lot of that is due to word of mouth and advertising.

We love our regular customers and always welcome new customers. We also have great prices and an amazing staff which helps make us successful.

What are the most popular items on the Ruby’s menu? What makes them so good?

Breakfast items are the most popular items on the menu. Our meat lovers skillet and pancakes are very popular. We always use high-quality fresh ingredients, which is what keeps people coming back for more.

Personally, what are your favorite items to order on the Ruby’s menu? Why?

I love the pancakes. We use really high-quality pancake batter and syrup, and they are very light and fluffy.

The Super Burrito includes steak, beans, lettuce, tomato and cheese, and you can get sour cream and guacamole on the side. This burrito is huge!  It is probably six inches long, three inches high and weighs in at at least one pound.

With competitors in the Minooka-Channahon area coming and going, what do you credit your staying power?

We owe a lot of our success to using only high-quality food and the great customer service that our staff provides. Our restaurant is very family-oriented, and customers love to come in and eat with family and friends. The service is also really fast; customers are amazed at how quickly their food flies out of the kitchen.

Ruby’s Burritos has a large menu in which customers can pick from an assortment of options. How have your customers responded to the amount of offerings available at Ruby’s?

Our customers love all of the different options we have on the menu. You can come in for breakfast or lunch, and we also have an extensive Mexican menu. We offer everything from skillets, biscuits and gravy, breakfast wraps, crepes, burgers, sandwiches, salads, Mexican breakfast, burritos, tacos, tortas and so much more. We also have a children’s menu for those 9 and under.

It is my understanding that your restaurant always welcomes customer feedback. Why is it important for a restaurant to listen to its customers?

We take our customers’ feedback very seriously and really value it. If there is a menu item that can be improved, we will do our best to make it even better. We also take special requests into consideration and try to accommodate our customers the best we can.

Are there any specials you want your customers to be aware of this week?

We have daily specials at Ruby’s. We always have a large board showing our daily specials, which include both breakfast and lunch items. We have our Meat Lover’s Skillet, which includes two eggs, ham, bacon and sausage, for $7, and our Waffle Combo, which includes one large waffle, two eggs and three pieces of bacon, for $7.
