Let’s Talk Tacos

Made with turkey, these cups are a treat everyone will enjoy

Putting the condiments “on the side” for these Turkey Taco Cups lets everyone dress his or her taco cup just the way he or she likes it.

Turkey Taco Cups are a delicious dish to serve to a crowd or a hungry family. This recipe makes 24 small taco cups, but can be easily scaled back to serve a few.

Since these are made with turkey, there is less fat when you fry it up. There is, as a result, no need to drain the meat.

Cooked with shredded carrots, the meat has a nice consistency and a good taste. Add ground red pepper if you like tacos that are a little spicy.

In fact, I made these and didn’t say they were ground turkey and no one even knew the difference. Serve this for a meal or bring as an appetizer to a party. Even if they are not piping hot, they are good. Even cold, I have not heard a complaint.

The taco cups are so easy to make.  Slightly oil each side of the cut out tortilla with some cooking spray. You will have to gently push them into the muffin pan so they do not tear.

I personally serve the tomatoes on the side because not everyone in my family likes them. That’s fine. More for me.

I like to have lots of options to put on top of these delicious taco cups.  It is a lot of fun for the kids or anyone to make it just the way they like.

And trust me, like chips, no one can eat just one.

I like to put a small wedge of avocado on each taco cup. It really makes it look appetizing, although most of the time the kids think it’s “yucky!”

Make these for your family and you will be happy that you did. Who doesn’t love a taco?  Especially one that is made the way just you like it.

Bringing these taco cups as an appetizer is always a hit.  You can also make your tortilla circles smaller for a smaller appetizer. That way you will get even more than 24. 

Have fun making these.  Let the kids get involved.  No reason that they can’t be the ones to press the tortillas in the muffin pan or place the condiments in cups for serving.

It’s most fun when everyone gets involved!

TURKEY TACO CUPS

6 10-inch (burrito size) flour tortillas 2 lb. ground turkey 2 carrots, shredded 2 packages taco seasoning mix – 1 oz. ea. ¼ to ½ tsp. ground red pepper (optional) 1 ½ cup shredded lettuce 1 ½ cup shredded cheddar cheese 4 plum tomatoes, seeded and chopped 1 avocado (optional)

1) Heat oven to 375 degrees.

2) Cut four 4-¼ inch circles out of each tortilla. Lightly coat tortilla circles with nonstick spray. Place each circle into a muffin pan to shape into a cup. Bake 8 to 10 minutes until crisp.  Cool.

3) Meanwhile, cook turkey and carrot with taco seasoning mix according to the package directions. Divide turkey mixture, lettuce, cheddar and tomato among taco cups.

OPTIONAL:  Top each taco cup with a small slice of avocado. Serve sour cream, sliced scallions, black olives and salsa on the side.
