Time for a comforting winter meal

Pot roast recipe makes for an easy, warm dish

This pot roast meal is easy to make. Prepare in the morning and by the evening a warm comforting meal will be ready for you and your family.

Isn’t it time to get out the slow cooker and start making some hearty meals for our families?

My mother emailed me this recipe for Three Envelope Roast.

I just couldn’t resist sharing it with you.

Not only is it super easy and quick to prepare, but it is delicious. The flavor is so good.

It is nice, when you are in a hurry, to have a recipe that you can basically throw together in a matter of minutes. Make this in the morning and you will have a delicious meal at night.

Take the opportunity to add some vegetables of your choice to this roast. We like to add potatoes and carrots.

Because the roast cooks for a while, cut the vegetables in bigger pieces so that they do not get mushy.

I usually just half or quarter the potatoes, depending on size. I peel the carrots and cut them in half.

Do not use the baby carrots, as they will cook too fast. Add an onion or two for even more flavor.

You will be tempted to peek at the roast while it is cooking in the slow cooker.

Try to resist the temptation. The roast cooks better when the cover is not lifted off.

Another name for a chuck roast is pot roast. Sometimes we get caught up in the name and cannot find what we are looking for in the store.

When I was first married, my mother-in-law gave me a recipe for pot roast.

I did not make it because I did not know that chuck roast and pot roast are the same thing. I’m a little smarter now. 

The smell will fill your house and you will be sure to be hungry by the time it is ready. 

The good news is that the smells alone won’t fill you up. 

I did not brown the roast before I put it in the slow cooker. The roast turned out perfectly. If you like a crispier roast, be sure to brown it. 

This recipe is so easy to make and so flavorful, that you will be amazed that it takes only minutes to prepare.

THREE ENVELOPE ROAST

3 pound beef roast, such as chuck roast

1 envelope of dry Italian salad dressing mix

1 envelope of dry ranch salad dressing mix

1 envelope of dry brown gravy mix

2 cups water

Instructions:

Put the water in a measuring cup that is larger than the amount of water you are using.

Now add and mix all three envelopes to the water.

Mix until blended completely.

Brown the roast (if desired). Add the meat to your cooker. Pour the water/salad dressing mixture over the roast. In the slow cooker, cook it on high for about 4 hours or on low about 8 hours.
